Spices and herbs play an important part in Vietnamese cuisine. Scallion (hành lá)
Hành lá có lá dài rỗng thường được cắt nhỏ và thêm vào súp, mì, các món chiên trong giai đoạn nấu nướng cuối cùng. Tuy nhiên một số người Việt không thích hành lá trong món Phở hoặc hủ tiếu. Hành lá cắt nhỏ cũng được trộn cùng với trứng trước khi chiên.
Lá hành cắt nhỏ và xào sơ cùng dầu thực vật, được ăn kèm cùng một số món ăn như Bánh Hỏi hoặc Cơm Tấm ở miền Trung và miền Nam của Việt Nam.
Scallion (hành lá)
Scallion has tubular green long leaves that are often chopped and added to soups, noodles, and fried dishes during the last cooking stage. Some Vietnamese people; however, do not like scallion leaves in Phở or Chinese noodles. Chopped scallion leaves are also mixed with eggs before frying.
Scallion oil (also called mỡ hành in Vietnamese), which is chopped and lightly cooked in vegetable oil, is served with some dishes such as Bánh Hỏi or Cơm Tấm in the Central and Southern parts of Vietnam.
Hành tím
Hành tím là những củ hành nhỏ, có màu đỏ hoặc tím. Chúng được sử dụng theo cách tương tự như tỏi trong món xào, súp, và hầm. Hành tím thường được cắt lát hoặc nghiền nhỏ để làm tăng hương vị cho thịt hoặc cá trước khi nấu. Thông thường, hành tím được xào bằng dầu thực vật trước khi thêm các thành phần khác (như trứng hoặc thịt bò) vào chảo. Trong dịp Tết Nguyên đán, những củ hành trắng nhỏ được ngâm chua trở thành một trong những món ăn truyền thống của miền Bắc Việt Nam.
Hành phi, một hình thức khác của những củ hành xắt lát được chiên đến khi chúng trở thành màu vàng nâu, cũng trở thành một món phổ biến của cháo, mì, cơm chiên, gạo nếp, và bánh cuốn hấp. Tỏi và ớt cũng được ngâm trong giấm để tạo thành hỗn hợp có tên là Giấm tỏi ớt, thường được dùng với mì hoặc phở. Khi xào, hương thơm của tỏi giúp tăng hương vị của thịt, đặc biệt là thịt bò.
Shallots (hành tím)
Shallots are small onion bulbs, with red or purple in color. They are used in similar ways to garlic in stir-fries, soups, and stews. Shallots are often sliced or finely chopped to increase the flavor of meat or fish before cooking. More commonly, shallots are fried in vegetable oil before adding other ingredients (such as eggs or beef) to the pan. During the Tet holiday, the small white bulbs of spring onions are pickled and become one of the traditional foods in the North of Vietnam.
Crispy fried shallots, another form of sliced shallots which are deep-fried until they become golden brown, also become a common garnish for porridges, noodles, fried rice, sticky rice, and steamed rice rolls. Garlic and chili are also pickled in vinegar to make a mixture named Chili garlic vinegar( Giấm tỏi ớt), which is often served with noodles or Phở. When stir-fried, the aroma of garlic helps to increase the taste of meat, especially beef.
Củ Sả
Đây là loại thảo mộc khác thường được trộn cùng với ớt, khá phổ biến ở miền Nam Việt Nam. Củ sả có mùi hương cam quýt, tương tự như vỏ cam nhưng rất mạnh. Sả xay nhỏ thường được dùng để ướp thịt bò, thịt lợn, gà, hay mực trước khi nấu.
Củ sả cũng được sử dụng để làm tăng hương vị của bún bò (Bún bò Huế), lẩu, hoặc thêm vào món hấp (hải sản hoặc thịt bò). Hương thơm của sả giúp loại bỏ mùi của thịt bò, cá, hoặc hải sản.
Lemongrass stalks (củ sả)
It is another herb that is often mixed with chili, more commonly in the South of Vietnam. Lemongrass has a citrus scent, similar to limes although it is much stronger. Minced lemongrass is often used to marinate beef, pork, chicken, or squid before cooking.
Lemongrass stalks are also used to increase the flavor of beef noodle soup (Bún bò Huế), hot pot, or added to steamed dishes (seafood or beef). The strong aroma of lemongrass helps to get out of the smell of fresh beef, fish, or seafood.
Ớt
Một trong những loại gia vị cổ nhất và phổ biến nhất trên thế giới đó là ớt, có từ năm 7500 TCN trên lục địa Hoa Kỳ, sau đó đến châu Âu, và cuối cùng là châu Á, thông qua các tuyến thương mại cổ đại.
Có nhiều sản phẩm ớt ở Việt Nam, bao gồm ớt tươi, dầu ớt, ớt khô, ớt bột và tương ớt. Người dân ở miền Trung và miền Nam thường sử dụng ớt nhiều hơn người dân địa phương miền Bắc Việt Nam. Ớt thêm hương vị cay vào các món ăn và làm cho một màu đỏ tươi sáng làm tăng màu sắc của các món ăn.
Chili
One of the oldest and most common spices all over the world is chili, dating back to 7500 BCE on the American continent, then reaching Europe, and eventually Asia, via ancient trade routes.
There are forms of chili products in Vietnam, including, freshly chopped chili, chili oil, dried chili, chili powder, and chili sauce. Local people in Central and Southern Vietnam often use more chilies than those in the North of Vietnam. Chilli adds a spicy taste to dishes and makes a bright-red color which increases the color of dishes.
Bột Tiêu Đen
Bột tiêu đen được làm từ những trái tiêu đen khô của hạt tiêu tươi đã chín hoặc chưa chín. Mùi thơm nóng của bột tiêu đen có thể làm tăng hương vị của các món ăn chiên, hấp hoặc kho.
Black Peppercorn Powder
Black peppercorn powder is made from the dried ‘drupes’ of unripe or ripe peppercorns. The hot aroma of black pepper powder can increase the taste of fried, thrilled, or braised dishes.
